Observations and corrective actions

PIC observed not adhering to food safety requirements and sanitizing practices (hot/cold holding temperature requirements, proper hygiene requirement) CA: PIC must adhere to food safety/sanitation requirements. CA: Educated PIC on various cold holding practices and requirements.  New Violation.

Observed wet wiping towels stored in both handsinks in main kitchen. CA: Handsinks shall not be used for purposes other than handwashing. COS: Wet towels removed.  Corrected On-Site.  New Violation.

Cold holding TCS foods (see temperature log) on buffet line observed at temperatures greater than 41F. CA: Cold holding TCS foods shall remain at 41F or below to prevent foodborne illness. COS: Food discarded.  Corrected On-Site.  New Violation.

Hot holding TCS foods observed at temperatures less than 135F. CA: Hot holding TCS foods shall remain at 135F or higher to prevent foodborne illness. COS: food discarded  Corrected On-Site.  New Violation.

Observed pitchers and pot used for scooping stored with handle touching or fully submerged in food product. CA: Store scoops with handle stored away from food to prevent contamination.  New Violation.
