Observations and Corrective Actions

PIC did not perform duties due to the following: 1. Proper Cooling methods. Observed food items not measuring at 41 degrees that was prep 9/24/19. Items failed to cool down within 6 hours of cooking. CA: Employees must use proper methods to rapidly cool time / temperature control for safety food. Employee Handwashing. 2.Employee Handwashing. Observed facility not effectively washing their hands. CA: PIC was advised to have employees effectively clean their hands, by routinely monitoring the employees' handwashing. Food Safety Training. Observed food items not measuring 41 degrees or below. CA: PIC was adivsed to properly train employees in food safety as it relates to their assigned duites.  New Violation.

Observed object in handwashing sink. CA: A handwashing facility may not be used for purposes other than handwashing. COS: PIC removed object.  Corrected On-Site.  New Violation.

Observed black debris inside of ice machine. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.  Repeat Violation.

Observed TCS foods not measuring 41 degrees or below (see items above). CA:Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC discarded some food items and moved items to the walk in freezer that were in the coolers for a hour.  Repeat Violation.

Observed food items that was prepped on 09/24/19 that did not cool down within 6 hours. CA: Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:(i) Placing the food in shallow pans;(ii) Separating the food into smaller or thinner portions;(iii) Using rapid cooling equipment;(iv) Stirring the food in a container placed in an ice water bath;(v) Using containers that facilitate heat transfer;(vi) Adding ice as an ingredient;(vii) Other effective methods. COS: PIC discarded food items.  New Violation.

Observed numerous wiping clothes stored on prep top table. CA: Cloths in-use for wiping counters and other equipment surfaces shall be:(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)  New Violation.

Observed ice scoop not properly stored. CA: In a clean, protected location if the utensils, such as ice scoops, are used only with a food that is not time/temperature control for safety food. COS: PIC properly stored scoop.  Corrected On-Site.  New Violation.

Observed prep top cooler not measuring at 41 degrees or below. CA: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule.  New Violation.

Observed no hot water at hand washing sinks. CA: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. PIC contacted plumber and plumber should arrive today. PIC temporality is using a prep sink that has sufficient hot water to wash hands only.  New Violation.
